Hearty Twice Baked Potatoes made easy
4 large baking potatoes
1/4 lb. ground beef
1 large onion, chopped
2 Tbs. to 1/4 cup skim milk
Prick the potatoes several times with a
fork. Bake in the microwave on high.
It should take from 7 to 11 minutes. Cook
until they feel tender when stuck with a
fork. While they bake, brown ground beef
and onion until beef is brown and onions look almost transparent and slightly yellow. Drain off grease.
Cut potatoes in half lengthwise. Carefully scoop potato out of skins. Leave enough flesh on skin so it will hold its shape. Mash scooped out
potato, add beef and onions and enough
milk to make it fluffy. Pile mixture back
into skins and microwave until hot. You
should have 8 filled skins. Enjoy
