Easy Breezy Chocolate Mousse
4 oz pkg. Sugar-free instant chocolate pudding mix
2 cups Skim milk
1 tsp. Vanilla
½ of an 8 oz. pkg. Reduced fat cream cheese
½ of an 8 oz. pkg. Cool Whip
Put cream cheese in a microwave safe bowl and microwave on high for 10 seconds. Let sit while you prepare pudding mix with skim milk as directed on the package. Beat the cream cheese with an electric mixer until soft. Add half of the pudding. Beat until smooth. Add the vanilla and the rest of the pudding and beat until smooth. Fold in the Cool Whip. Pour in 9 x 9 or 8 x 11 pan or 9 bowls. Chill an hour so the flavors will blend. Makes 9 servings. Can put in graham cracker or Oreo cookie crumb crust on bottom for more calories and more expense.
Butterscotch Rum Mousse
Follow recipe above except use sugar-free instant butterscotch pudding mix and 1/4 tsp. Rum flavoring instead of vanilla.
Follow recipe above except use sugar-free instant lemon pudding and omit vanilla.
