Marvelous Meatloaf for Two or Four (Double it for four hearty servings)
- 2 Tbs. chopped dried onion
- 1/3 cup water
- ½ lb. ground beef
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 egg
- 1/4 cup raw oatmeal
- 1/4 cup catsup
- 1 tsp. Worcestershire Sauce
Place the dried onion pieces in a Corningware grab-it bowl or a 6 inch round microwave baking dish. Add 1/3 cup water and cook in the microwave for 2 minutes. Mix the other ingredients in a bowl and add the cooked onion. Pack it all into the Corningware bowl or round 6 inch baking dish, and microwave for 4-5 minutes. When it’s done, it will look reddish brown, but be firm. Cut into four pieces. For two calorie-conscious people, place one piece on each plate, and reheat rest for next meal. If cut into two pieces see nutrional amounts below. Heart patients should stick to the four-serving portion to keep salt intake low.
You can double the ingredients and bake in two round bowls. The time to cook will be a bit longer. That will serve four or eight, depending on serving size
